Fish preparing school for team event!
 

This is perfect for activity on team event or birthday party. We will teach you how to fillet and clean the fish and prepare different dishes for your evening. 

The events starts with some prepared snacks and drinks and together we start to make some more food. 

 

Course Outline:

  • Handwashing and distribution of equipment (aprons, gloves, knives, cutting boards)

  • Introduction to seasonal fish (all different fish we can get for the day, minimum 5 species)

  • Cleaning the fish

  • Cutting

  • Filleting (all participants can try)

  • Salting

  • Marinating

  • Seasoning

  • Frying, grilling, smoking

  • Preparing fish dishes

  • Preparing side dishes

  • Eating

In general, we have used 5–15 different species of freshly caught fish. From the selection:
(pike-perch, trout, salmon, crucian carp, ide, sprat, Baltic herring, round goby, garfish, pike, cod, sturgeon, sea bream,
wolffish, perch, whitefish, flounder, roach, smelt, catfish, bream, vimba, bleak, ruffe, river lamprey, and burbot).

We learn how to clean different fish and the tricks of filleting and cutting. Also, fishermen’s tips on which fish are best (and not suitable) for certain dishes.
We cook with all types of fish, and, if possible, also with fish roe and liver.

The more exotic fish training also includes preparing raw squid, tiger prawns, or mussels.
Alongside the fish, we prepare a suitable sauce and grilled vegetables. Like any proper feast, it ends with dessert and coffee.

The event lasts 5 hours in total, of which the training takes about 3-4 hours. The rest is free time.
